Crepes are a Sunday morning staple at our house. Sometimes we top them with a sprinkling of powdered sugar. Often we fill them with Nutella. Mystic restaurants serve waffles, pancakes, and french toast in lieu of crepes, so our crepe pan gets plenty of use. We are partial to the Joy of Cooking recipe.
A couple of weeks ago, we were vacationing just outside Montreal. We stopped into a sweet little restaurant to have breakfast. The staff of three was clearly overwhelmed at the sight of seventeen people taking up almost every seat in the place. After assuring them that were in no rush as long as the coffee cups were full, we placed our orders. Crepes all around.
Our Canadian friends were not willing to let their standards slide even with a full house. Each crepe arrived at the table folded just so, with a side of fresh fruit and a bit of syrup. We’re going to have to step up our game here at home. Rectangular crepes. Aren’t they pretty?
